what I love :: rhubarb + strawberries
Yummy rhubarb from our local CSA.
+ Strawberries from yesterday's pick-your-own adventure.
= the perfect 6am pre-breakfast muffin snack (vintage strawberry tablecloth makes them taste even better).
Strawberry - Rhubarb Muffins
1.5 cups unbleached flour
1 cup whole wheat pastry flour
1/2 tsp salt
1.5 tsp baking soda
1 egg, beaten
1/2 cup maple syrup
1 stick melted butter
1/2 cup buttermilk
1 tsp vanilla
1 tsp grated orange rind (optional, but oh-so-good)
1 cup chopped rhubarb
1 cup sliced strawberries
Mix dry in a large bowl. Mix wet separately. Add wet to dry. Stir in berries and rhubarb. Spoon into greased muffin pan. Bake at 350 for 30 minutes. Devour.























I made these last night too - with some modifications (regular ole' milk and whole wheat flour) and they were yummy! Not too sweet, so you can put jam or cheese on them!

Oh, they look so yummy. But what can I substitute for buttermilk? We don't have it here in the UK. Well, we may do, but not here in my northern town!

Scarlettina - I've substituted plain yogurt for buttermilk before with good results. So try 1/2 cup of yogurt instead!
