Having nothing to do with garlic scapes, this was lunch yesterday. Thought it could be the day before, or today, or tomorrow, for that matter. Kale chips, popcorn, and hard boiled eggs. These are the things I worry about my children never wanting to touch again once they leave my house, for over saturation in their childhoods. But for now, that's not my worry....and this is lunch. And no one is complaining (yet!). Maybe today, I'll throw in a garlic scape pesto pizza - that will please everyone.
Garlic Scape Pesto
20 garlic scapes
2/3 cups almonds
2/3 cups parmesan cheese
2/3 cup olive oil
1/3 to 1/2 cup heavy cream
salt and pepper, to taste
In a food processor (or sturdy blender), combine scapes, almonds, cheese, salt and pepper. Slowly add olive oil. Add cream to desired consistency.
This makes a healthy-sized batch of pesto, that I use over the course of a few days on several meals. On pizza (skipping the sauce, adding sliced tomatoes and mozzarella cheese), pasta (I love it with spinach pasta and sauteed veggies), toast (grilled bread with sharp cheddar cheese, yum) and as a dipping sauce for those brave of taste buds. It's strong, but the cream helps tamp that down just a bit, and it's oh so good.
